The Sidima region is situated between two regions well known for Ethiopia's coffee export, Yirgacheffe and Lima. The coffee in this region is grown in kebeles which means "small villages". The ideal soil conditions here, combined with the low planting density makes for a great, complex coffee.
We roast all of our coffees just past first crack, to preserve the natural flavors that come from where and how the coffee was grown.
In this coffee, you can expect a more acidic mouthfeel, with bold tasting notes of chocolate and blueberry. You might detect some hints of vanilla and lavender on the backend and in the aroma.
